Ingredients

Red Cabbage with Pine Nuts

• 2 tablespoons olive oil

• 1 onion, diced

• 2 apples, peeled, cored, and sliced

• 1/2 cup white wine

• 1 head red cabbage, cut into strips

• 1 teaspoon kosher salt

• 1/2 teaspoon freshly ground black pepper

• Pine nuts, for garnish

Instructions

  1. Heat olive oil in your pressure cooker over medium heat. Sauté the onion until translucent and soft.
  2. Add the apples and wine.
  3. Stir the cabbage into the pressure cooker. Cover and cook for 2 to 4 minutes at HIGH pressure.
  4. When time is up, open the pressure cooker according to manufacturer’s instructions. Season with salt and black pepper. Sprinkle with pine nuts and serve immediately.

Ingredients

Tomato and Eggplant Salad Recipe

• 1 eggplant, peeled and diced

• 1/2 cup water

• 3 tablespoons vegetable oil

• 2 cloves garlic, minced

• 2 cups tomatoes, chopped

• 1 tablespoon white wine

• 1 teaspoon cayenne pepper

• Sea salt and black pepper, to taste

• 2 tablespoons fresh parsley

Instructions

  1. Throw the eggplant and water in your pressure cooker. Cover and bring to HIGH pressure; maintain pressure for 4 minutes. Quick release the pressure, remove the lid and set aside.
  2. Add the rest of the above ingredients, except for parsley. Bring to HIGH pressure and maintain pressure for about 2 minutes.
  3. Sprinkle with fresh parsley and serve chilled.

Corned Beef and Cabbage

• Non-stick cooking spray

• 2 onions, peeled and sliced

• 1 corned beef brisket

• 1 cup apple juice

• 2 teaspoons orange zest, finely grated

• 2 teaspoons yellow mustard

• 1/2 head cabbage, diced

• Sea salt and ground black pepper, to taste

Instructions

  1. Treat the inside of the cooker with non-stick cooking spray. Arrange the onions on the bottom of your cooker.
  2. Add the beef, apple juice, orange zest, and yellow mustard. Lock the lid into place; bring to LOW pressure; maintain for 45 minutes. Afterwards, remove the lid.
  3. Place the cabbage on top of the ingredients. Then, bring to LOW pressure; maintain pressure for 8 minutes. Season with salt and black pepper to taste.
  4. Carve the brisket and serve.

Delicious Braised Cauliflower

• 2 tablespoons sesame oil

• 1/2 cup sweet onion, chopped

• 2 cloves garlic, crushed

• 1/4 teaspoon pepper flakes, crushed

• 1 pound cauliflower, cut into florets

• 1/2 teaspoon salt

• 1/4 teaspoon ground black pepper

• 1/2 teaspoon dried basil

• 3/4 cups water

Instructions

  1. Heat sesame oil in your pressure cooker over medium heat. Add sweet onion, garlic, and red pepper flakes; cook, stirring continuously, for about 2 minutes. Add the cauliflower florets and continue cooking for about 5 minutes.
  2. Sprinkle with salt, black pepper, and dried basil; add the water.
  3. Cook for 2 to 3 minutes at HIGH pressure. Lastly, open the cooker by following the manufacturer’s instructions. Serve over rice.

• 1/2 pound carrots

• 2 parsnips, diced

• 2 stalks celery, diced

• 1 boneless chuck roast, into serving-sized portions

• 1 envelope onion soup mix

• 1 cup tomato juice

Instructions

  1. Arrange the vegetables in the bottom of your pressure cooker. Lay the chuck roast on the vegetable layer.
  2. In a mixing bowl, combine the rest of the ingredients; mix well to combine; pour the mixture into the pressure cooker.
  3. Then, bring to LOW pressure; maintain pressure for 45 minutes. Serve warm.
